Traditional Thanksgiving Meal Takes on the Flavors of Morocco in Class Offered by DCCC at Chef Dion’s Restaurant

Nov. 7, 2013 – The traditional Thanksgiving turkey dinner will take on an international flavor as Davidson County Community College offers Chef Dion: Moroccan Thanksgiving on Nov. 17. The course will be held from 6-9 p.m. at Chef Dion’s Restaurant in Welcome.

Chef Dion Sprenkle will prepare Thanksgiving dishes with a Moroccan twist in front of the class, explaining each step as he cooks. Once the preparation is complete, class participants will enjoy a meal of Moroccan turkey breast, Tagine-style vegetables and couscous with almonds and raisins. Students are encouraged to bring a bottle of wine. German Riesling Kabinett or Gewurtzraminer white wines or fruit-driven spicy reds such as Zinfandel, Spanish Garnacha, Rioja or Nero d’Avola are recommended.

“We’re excited to bring unique fare to the table for people who are interested in trying something different for the holiday,” says Rhonda Winters, part-time program coordinator for the School of Business, Engineering and Technical studies at DCCC. “We’ve learned that Moroccan cuisine has been influenced by nations and cultures occupying or governing the country through the centuries. The cooks in the royal kitchens of Fes, Meknes, Marrakesh, Rabat and Tetouan perfected these dishes over time and created the basis for the Moroccan cuisine enjoyed today.” 

Sprenkle is a classically trained chef who graduated in 1992 from the prestigious Culinary Institute of America in Hyde Park, New York. His resume includes some of the finest restaurants in New York. He was the chef de cuisine at the New York Palace Hotel, executive chef at The Water Club and at Spazzia Restaurant and chef de cuisine at Spartina Restaurant.
